These delicious cookies have a divine nutty flavour and huge chips of melting chocolate. They're going to be your favourite chocolate chip.
Makes 10 cookies.
INGREDIENTS
1/2 cup tahini
1/3 maple syrup
3/4 cup all-fashioned oats
1/3 cup ground almonds
1 teaspoon vanilla bean paste
1/2 cup dark chocolate chips (70% cocoa)
Sea salt flakes to garnish
DIRECTIONS
1. Preheat the oven to 350ºF (180ºC) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine tahini, maple syrup and vanilla until everything is combined.
3. Stir in all-fashion oats and ground almonds, until incorporated. Gently, fold in chocolate chips.
4. Scoop out heaped tablespoon of the dough onto the lined baking sheet, squash each ball with the back of the spoon or press them with the palm of your hand gently. Bake for about 10 to 12 minutes, until they are slightly darker around the edge, but still raw in the centre.
5. Take the baking sheet out of the oven and place it on a wire rack for 5 minutes, meanwhile they are still warm sprinkle some sea salt flakes on top. Finally, transfer the cookies over the wire rack to cool completely.
