Chocolate brownie cookies

Chocolate brownie cookies for chocolate addicts. With crisp and shiny crust and ultra soft centre. Ready in less than 30 minutes

Makes 7 cookies


INGREDIENTS

2/3 cup bittersweet chocolate, roughly chopped

1 tablespoon butter

1 medium egg

1/3 cup granulated sugar

1 teaspoon pure vanilla extract

1/8 cup all-purpose flour

1/8 teaspoon baking powder

Pinch of salt



DIRECTIONS

1. Preheat oven to 350F (180°C) without fan. Position rack in the lower third (just below the centre) of the oven.

2. Melt chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each, until almost melted, set aside.

3. In a medium bowl, whisk the egg and sugar with an electric mixer to high speed for 5 minutes until pale and fluffy. This step play a key role in the achievement of the crackly and shiny crust.

4. Reduce speed to low and stir in the melted chocolate until combined. Finally add the flour, baking powder and salt and mix with a rubber spatula until just incorporate. Leave the batter set for 2 to 4 minutes, meanwhile line a baking tray with parchment paper.

5. Drop heaping tablespoons of dough 2 to 3 inches apart onto the prepared baking sheet. Bake until cookies are shiny and crackly yet soft in centre, around 7 to 9 minutes. Cool on baking sheet 10 minutes and then transfer to a wire rack to cool completely.

*Note: I like my cookies undercooked in the centre, so i usually take them out of the oven after 6 minutes*
