Madeleines are a traditional and classic French treat. This recipe makes the perfect amount to enjoy the sweet, light and softly crispy cake-like madeleines.
Makes 12 madeleines
INGREDIENTS
1/3 cup sugar
1 tablespoon honey
Zest from 1 lemon
2 eggs
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup olive oil
DIRECTIONS
1. Preheat oven to 180ºC and butter the madeleine pan.
2. In a large bowl mix sugar, honey and lemon zest until combined.
3. Add the eggs one a time and beat slightly until combined.
4. Sift flour, baking powder and salt, mix until incorporated and add to the wet ingredients until combined.
5. Add oil to the mixture and mix until well combined.
6. Pour batter evenly among the madeleine pan and keep in the fridge for at least 30 min before baking. You can keep it overnight. Bake for 8 to 10 minutes or until the edges of the madeleines are golden brown.
