The original recipe says that no man can resist this cake. In my case, I have to say that all my family and friends are in love with this amazing cake. It is really good and also easy to make.
INGREDIENTS 1 stick (113g) salted butter at room temperature, melted 1 cup (200g) light brown sugar, packed 1 teaspoon (5ml) pure vanilla extract
1/2 tablespoon (7ml) lemon juice 3 large eggs at room temperature 1 1/2 cups (180g) all-purpose flour 1/8 teaspoon (1g) baking soda 1/2 cup (125ml) sour cream
DIRECTIONS
1. Preheat the oven to 350 F (180ºC). Grease an 8x4 inches loaf pan with non-stick spray. This way your cake will come out easily.
2. In a separate bowl sift together the flour and baking soda. set aside.
3. In a large bowl whisk together sugar, vanilla bean paste and lemon juice. Add eggs one at a time until well combined
4. Next, add the flour mixture in 3 additions, alternating with the sour cream. Mix everything with a rubber spatula until incorporated.
5. Finally, Pour batter into the prepare pan. Tap the pan firmly on the counter several times to remove any bubbles and smooth the top.
6. Bake for around 50 minutes, or until a toothpick inserted in the center comes out clean, or until golden brown. When cake is done, remove it from the oven and let cool on a wire rack almost 10 minutes. Then, turn out onto a cooling rack to cool completely.
I made this cake using a medium loaf cake pan (8x4x3 inches) from Usa Pan.
