Nutella Cupcakes for Two

One of my favourite ingredients is the Nutella. I usually eat it direct from the jar with a teaspoon or tablespoon he he. Anyway, if you are a big NUTELLA FAN this recipe is perfect for you. It will not disappoint you.

Make this recipe just for you or to share with someone who love Nutella as much as you do!


Makes 2 cupcakes.


INGREDIENTS

1/3 cup + 1 tablespoon (50g) all purpose flour 1 egg 2/3 cup (150g) Nutella


Topping

2 tablespoons Nutella A handful toasted hazelnut (optional)


DIRECTIONS

1. Preheat oven to 350ºF (180ºC) and position a rack in the middle of the oven. Line a cupcake pan with two paper liners.


2. In a medium bowl slightly whisk the egg, then add the Nutella and continue whisking until combined. Finally stir in the flour and mix with a rubber spatula until just incorporate.


3. Spoon the mixture into the cupcake liners. They will be full. Then, bake cupcakes for 9 to 12 minutes or until the top of the cupcakes have a crispy crust. I recommend not to over bake them in order to have a fudge and gooey centre. Let the cupcakes cool on a wire rack about 5 minutes before removing from the pan.


Decoration

1. Heat the Nutella in a small microwave-safe bowl for 20 sec or until slightly melt. Place a mound of melted Nutella (1 tablespoon) on top of each cupcake, then sprinkle some toasted hazelnut on top.

If you want to make more than two cupcakes, just double the recipe as long as you need. Keep them fresh in a glass or plastic container up to 3 days.


Look at the cupcake, the centre seems like a molten volcano and the edge looks like a brownie with crispy crust. Need I say more? They are So GOOD!!
