Olive Oil, Chocolate Chip Banana Muffins

Soft and fluffy olive oil, chocolate chip banana muffins. They're irresistibly moist and packed with wholesome ingredients.

I just love them! These muffins are SO easy to make. They can be thrown together and made in less than 35 minutes. Being an easy and portable snack, they're perfect to carry everywhere.

Makes 6 muffins


INGREDIENTS

1/4 cup olive oil

1 egg

1/3 cup light brown sugar, packed

2 small ripe bananas, mashed

1 cup all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/3 cup walnuts finely chopped

1/3 cup dark chocolate chips.



DIRECTIONS

1. Preheat the oven to 350ºF (180ºC). Position rack in the middle of the oven. Put the paper liners in the muffin pan.

2. In a large bowl whisk olive oil, egg, sugar and bananas mashed until well combined, set aside.

3. In a separate bowl sift the flour, baking powder, baking soda and cinnamon and mix everything until incorporate. Finally, add chocolate chips and walnuts. Reserve some of them for topping.

4. Add dry ingredients into wet ingredients and mix until incorporated. Please, do not over mix the batter in order to get good results.

5. Scoop the dough evenly among the muffin pan. Topped with the remaining chocolate chips and walnuts. 6. Bake the muffins for around 18 minutes or until a toothpick inserted into the centre of the muffin comes out clean.


Let muffins cool for 5 minutes on a wire rack.
