Peanut Butter Banana Ice Pops


Makes 4-6 ice pops


INGREDIENTS

4 medium ripe bananas 1/2 cup smooth peanut butter 1/2 cup water Honey or maple syrup to taste (I added 1 tablespoon) 1/4 teaspoon sea salt (add only if the peanut butter is unsalted)


Topping

1/2 cup chocolate, chopped (use whatever you like)

Handful coarsely chopped peanuts


DIRECTIONS


1. Start by placing all the ingredients in a food processor or blender and operate until the mixture is creamy.

2. Pour batter into moulds and insert the ice sticks. Freeze for 5 hours preferably overnight.

3. Get the ice pop moulds from the freezer and briefly dip each mould into a glass or container filled with warm water until the pops loosen (about 30 seconds). Remove the ice pop from the mould and place it over a plate.


To make the glazed

1. Melt the chocolate in the microwave or in a bowl over simmering water. Dip the top of each ice pop in the melted chocolate and let it run over the ice pop. You should do it as quick as you can because the chocolate will get hard immediately.

2. Top with chopped peanuts.


Serve the ice pop straight from the freezer and storage in the freezer into a plastic bag.
